      Would be cool if I could set Steam up to automatically download and use the latest version of GE-Proton like it does with "Proton Experimental"

          If you use Steam in a flatpak, you can download the Proton-GE flatpak, which updates automatically.

            Wait for real? How? Do you mean the flatpak of ProtonUp-qt?

            If so I'm already using both of those, but I have to open up the latter and update manually each time. I then have to manually change the compatibility settings to point to the new version.

              Proton-GE is available as Flatpak directly: https://github.com/flathub/com.valvesoftware.Steam.CompatibilityTool.Proton-GE

              After installation it will be picked up by the flatpak version of Steam automatically.
