Why don't protestors who oppose Trump/ICE open carry their guns to prevent what's currently occuring in the US ie kidnapping, assaults etc?

Why? If the population here was as committed as a population overseas I hardly see what the difference is, besides the fact that Americans are way better armed.

Best and simplest answer is that technically they're still considered law enforcement. Nearly everything they're doing is constitutionally illegal, but only the courts have the right to determine that.
If we start threatening police with guns, every single nook and cranny of our legal system justifies the police murdering us. Maybe some cops would get paid leave for a few weeks, or possibly even lose their badges, but that's about it.
And then they'll use it to justify an even more inflated budget for ICE, and everything will get exponentially worse.
So second amendment is totally useless then.

Your whole point has been to say that privately owned arms are going to be worthless against a military. That's basically saying guns are pointless and civs have no reason to own them.

Edit: I'm not advocating for violence. More so "a well regulated militia" which could be established by protesters or Democratic Governors for genuine self defence.Because guns are there to enforce tyranny, not to prevent it. It's just they're finally saying the quiet part out loud.

Privately owned guns will hopefully lower the morale of the occupying force which is why they are already trying to get guns away from liberals. Specifically trans people by calling it a mental illness, and they have already laid the ground work by calling antifa a terrorist organization to take weapons from anyone “suspected of terrorist activity”, they can then do things like using palantir to figure out who owns a weapon and also purchased cannabis (and just happen to be liberal weird how the algorithm only seems to find them) and start offering people to surrender their weapons or be charged with a felony.
The idea that the army is going to just go to war with a city overnight is ridiculous but a slow campaign designed to dehumanize those against the party and in that process take their weapons is a very logical scenario that can easily make those guns useless
