Highly abbreviated summary:
New story mission chain.
Further additions to biome assets, new star system type with different styles of terrain generation.
Many QOL updates.
It's nice and sort of funny to see that they've restored water to some planets' moons. Wild to think it's been maybe around 8(?!) years since that was abruptly removed. Always get some mixed vibes from No Man's Sky updates due to this awkward back and forth between removing and restoring parts.

I saw a clip where some gas giant exploration is happening and it showed what appeared to be collapsing terrain. I thought that was pretty neat

I have such a hard time getting into the game. I just don't think the flying around feels as good as it should.

I believe they mean the variety of stations, which back in the day there were only three.
Anyway, they should go back to the game.

It does not challenge you at all and is colorful as hell. Children love it.

Think of it as a space tourist game. I like to inspect planets and build unique vacation homes. Main quest? Nah, I'm building an upside-down pyramid on top of a tiny island on a planet almost completely covered in water. Why? Because I want to.
